I like this one

If I had to pick one Grand Canyon photo from my trip to print, I think I would pick this one. There's a variety of great colors and I like the depth of field. One day, I will have a home big enough to make one room filled with travel photos. So here's hoping to have Japan, Singapore, Italy and Israel photos in the future. lol. :D

Food Feature: Taro pt. 1

I have always known taro to be the ultimate Hawaiian favorite, since many who are from there grow up with the delicious plant. But surprisingly, taro is a food eaten in many cultures, from the Chinese to the Spanish. The taro I know is well used in traditional Hawaiian fare but for the most part, every man or woman born in Hawaii has tried it in some form or another.

Taro is very versatile. This is why I plan to feature it in
more than one blog post. You may not be able to find it any form where you live but you can certainly order it online. See the end of this post for a link. I'll leave available resources to educate you about the foods I feature and will simply share my personal experiences of cooking.

Tonight, I made a more Americanized dish using taro...

Taro Pancakes!

Yes, this root is sold in pancake form and is sold like any other pancake mix. All you have to do is add water. Tonight I gave it a little twist. I was in the mood of some good Taro Banana Pancakes!

Bananas inside and out, topped with cinnamon and a little whipped cream. Here's another thing. While traditional maple syrup is good with this, I find that the best kind of syrup to top this off with is coconut syrup. And I don't normally like coconut all that much!

A little mention on the bananas. If you don't like bananas another good fruit with this pineapple or any tropical kind of fruit. Eh, leave out the fruit if you want. But if you do use bananas I find that using just-turning-ripe ones are good. Not only is it not too mushy but the very slight tartness in just-turning-ripe bananas adds a nice flair.

Taro pancakes have a slight nutty flavor and texture to it.

Taro Banana Pancakes

- 2 cups pancake mix
- 1 1/2 cups of water
- 3 bananas, sliced. Put two bananas sliced in the batter.
Leave the rest for the topping
- Cinnamon for topping as needed.
- Whipped cream
- Coconut Syrup

In a bowl mix pancake mix, water and bananas together. Do not over stir. In medium/med high heat, ladle batter into a non stick skillet with a touch of oil or butter. When it bubbles, flip and cook for another few minutes. It should make 5 to 6.

Top with cinnamon, whipped cream and coconut syrup.
